Celiac Disease & Gluten-free Diet: Myths vs. Facts - HP204

Are you thinking about going gluten-free? Is going gluten-free actually healthier for you? This workshop will focus on the myths and truths of what the gluten-free diet is and what celiac disease and non-celiac gluten sensitivity are.

All staff and faculty are welcome to attend this free session.

Participants will:

  • Understand the differences between celiac diseases, gluten sensitivity and wheat allergy;
  • Understand what celiac disease and non-celiac gluten sensitivity are;
  • Learn the pros and cons of the gluten-free diet;
  • Discuss the myths and facts of the gluten-free diet;
  • Become aware of what is available for those with celiac disease or gluten intolerance on the UBC campus; and
  • Have an opportunity to ask questions and sample gluten-free foods.

  • Facilitators:

    Val Vaartnou is the President of the Canadian Celiac Association - Vancouver Chapter. She has been on the Board of Directions of this volunteer managed charity for the past 6 years. Val was diagnosed with celiac disease in 2003, at the same time as her daughter, but only realized what poor medical advice they had received, when she joined the Canadian Celiac Association in 2009. Subsequently, she has attended conferences and keeps abreast of scientific research covering topics related to gluten disorders and autoimmunity. She runs the Vancouver and Richmond Support Groups for the chapter and is editor and main contributor to the Celiac News, a quarterly newsletter, focusing on celiac disease, non-celiac gluten sensitivity and related disorders.

    Nicole Fetterly, a Registered Dietitian, is the Nutrition & Wellness Manager in Student Housing and Hospitality Services. Nicole is passionate about helping people make the best food choices they can for themselves and for a sustainable food system.

    After graduating from UBC's integrated dietetic program in the Faculty of Land and Food Systems, she worked for Vancouver Coastal Health in clinical dietetics. She was the Nutrition Operations Manager at Choices Markets, an independent chain of 10 natural and organic food stores in British Columbia. She was named Star Woman in Grocery for 2015 by Canadian Grocer magazine.

    Since October, 2015, Nicole has been providing one-on-one counseling and educational outreach to students in residence, supporting Employee Wellness initiatives, consulting for the UBC Food Services culinary team to increase the healthy offerings and improve the labeling of foods served on campus and writing articles and recipes for her blog www.food.ubc.ca/nutrition.
